Savory is a small, aromatic bush, which resembles the thyme. It can reach a height of 30-50 centimeters. It can be found all over Greece, especially in sunny, rocky places. It has small pink-purple flowers, which appear in spring and summer. It has a strong flavor which reminds us of the thyme and the oregano. It is well known for its medicinal properties, but it is also used in cooking, as well as in the making of aromatic honey, liqueur, toothpastes and soaps. As far as its medicinal properties are concerned, the savory is especially beneficial to the digestive system. It is appetizing and it helps digestion. It fights intestinal parasites and it relieves bloating. It treats stomachaches and diarrhea. Savory is also expectorant. It soothes coughing and it is beneficial to bronchitis and asthma. Generally it stimulates and strengthens the body. Finally it can be applied externally, as an antiseptic, on wounds and on insect bites. As for its culinary use, the savory can be used like the thyme and the oregano. It flavors roast meats, poultry, fish, soups, salads, omelets, pizzas, eggs, sauces, vegetables and legumes. It’s ideal for all indigestible dishes.

Savory decoction

To make a decoction put a teaspoonful of the herb in a cup of boiling water. Leave for 10-15 minutes, strain and drink up to 3 cups a day after meals. The decoction can also be used externally, as a compress, on wounds or insect bites.
