White pepper comes from the same plant from which black pepper comes. When peppercorns are left to ripen on the plant and the outer layer is removed, we take white pepper. Thus, white pepper comes from the seed of the berries. In contrast, black pepper comes from the whole berries, which are selected before they are fully ripe. White pepper is not as hot as black pepper. However, it gives a spicy taste to white sauces, mayonnaise, fish and soups. It is also used in sausage-making and in cured meats.
